Lemon Cilantro Quinoa

With the exception of rice and peas occasionally (true Jamaican) I don’t really like rice so I opt for vegetables, fresh or roasted, or quinoa. So today I am bringing you one of my favourite quinoa recipes to date.

Start by measuring out 1 cup of quinoa and 2 cups of water . Pour the water into a pan and bring to a boil. To my water I add 1/4 onion diced, 1/2 teaspoon of granulated garlic and salt to taste.

Bring your pot to a boil and add the quinoa. Stir to combine the quinoa and seasoning, bring you heat to medium low and allow it to cook.

Your quinoa should be ready in about ten minutes.

While you Quinoa is cooking wash and roughly chop a handful of cilantro, set aside. Next juice half a medium lemon, it should yield 1/4 cup of lemon juice.

Remove the quinoa from the heat and stir in lemon juice and cilantro. Serve with your favourite protein.
